3 Whole30 breakfast ideas for crisp mornings

Cutting dairy, added sugar, grains and legumes from your diet all at once can sound intimidating. However, knowing that the final product will be delicious can definitely serve as a source of motivation. Here are 3 recipes that fit into the Whole30 breakfast diet for your mornings.

 

1. Sweet Potato Apple Breakfast Bake

Ingredients

  • 1 large sweet potato

  • 1 large apple

  • 2 teaspoons of coconut oil

  • 1/8 teaspoon of sea salt

  • 1 teaspoon of cinnamon

  • ¼ t teaspoon of nutmeg

  • 2 whisked eggs

  • ½ cup of coconut milk (full fat)

Instructions

  1. Peel and shred apple and sweet potato.

  2. Preheat oven to 200 °C and heat a medium skillet over medium heat.

  3. Add coconut oil to pan.

  4. Add sweet potatoes and cook until soft and brown.

  5. Add shredded apples, salt and spices and continue cooking over low-med hear for approximately 5 minutes.

  6. Add the whisked eggs and coconut milk to the skillet.

  7. Spread the mixture evenly on a baking tray.

  8. Bake in the preheated oven for about 10 minutes, or until the eggs are set and beginning to brown.

 

2. Pumpkin Smoothie

Ingredients

Instructions

  1. Add coconut milk, pumpkin, pumpkin pie spice, banana, and ice to blender.

  2. Blend until smooth. 

 

3. Toasted coconut and chocolate larabars

Ingredients

  • 1 cup of mixed nuts of your choice

  • 1 cup of pitted dates

  • 1 cup of toasted coconut

  • 1-3 teaspoons of cacao powder

Instructions

  1. Toast coconut in a pan over medium-low heat until the edges turn golden brown.

  2. Blend dates, nuts, and coconut.

  3. Add cocoa powder and pulse until all ingredients form into a ball.

  4. Place mixture onto a piece of parchment paper and mould it into a square that is about 3/4" thick.

  5. Chill for 2-3 hours until firm.

 

The breakfast ideas above should be more than enough to get you started. Of course, you don’t have to be on the Whole30 diet before you can enjoy all this wholesome goodness, so why not whip one up for yourself this weekend?
