Making your own mason jar meals

Mason jar meals are the new kids on the block with oodles of popularity to boot. Indeed, they score highly on aesthetic presentation and convenience. Furthermore, with meals pre-packed into these clear glass jars, you no longer need to worry about portioning. If this easy-to-make dish appeals to you, here are 3 recipes which you might want to try out.

 

Blueberry baked oatmeal

Ingredients

  • 2 cups rolled oats
  • 2 cups frozen blueberries
  • 1 cup milk
  • ½ cup egg whites
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • ¼ tsp baking soda
  • Cooking spray

 

Instructions

1. Preheat the oven to 180°C.

2. Spray the mason jar with cooking spray.

3. Add all ingredients into a bowl and mix well.

4. Fill up 6 mason jars (half pint size) with the mixture.

5. Bake for 35 minutes.

6. Cool completely before storing in the fridge.

 

Apple pie parfait

Ingredients

  • 2 cups peeled apple (chopped)
  • 2 cups plain Greek yoghurt
  • Granola
  • ½ cup water
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • ½ tsp nutmeg
  • 1 tsp cinnamon
  • 2 tbsp chia seeds

 

Instructions

1. Mix the apple, water, brown sugar, honey, nutmeg and cinnamon on a saucepan. Heat them over medium heat for 15 minutes.

2. Remove (1) from heat and add the chia seed. Let the mixture cool.

3. Once cooled, transfer 3 tbsp of the mixture from (2) into mason jars. Then, top up the jars with yoghurt.

4. Add granola over the mixture in the jar just before serving.

 

Summer quinoa salad

Ingredients

Dressing

  • ¾ cup olive oil
  • ¼ cup water
  • 2 tbsp white vinegar
  • 1 clove garlic
  • ½ tsp salt
  • Fresh lemon juice
  • Handful of fresh dill
  • Handful of fresh parsley

 

Salad

  • 2 cups quinoa
  • 2 pints grape tomatoes
  • 2 large cucumbers (sliced)
  • 1 small jar sun-dried tomatoes/ peppers
  • 1 cup feta cheese

 

Instructions

1. Add all of the dressing ingredients into a blender, and blend till a smooth consistency is achieved.

2. Cook quinoa and leave to cool.

3. Layer each mason jar with the dressing and salad ingredients. Your dish is now ready to be served.
